Cobblestone Cafe and Pizzeria - Gourmet Pizza and Sandwiches in a Utah Family Setting

October 16th, 2006 by Cameron

When talking about pizza and sandwiches in Utah, Cobblestone Cafe and Pizzeria is in a class all its own. Although you are welcome to get your regular ol’ toppings like pepporoni, sausage, ham, and veggies on your Cobblestone pizza, you are really missing out if you don’t indulge your adventurous side and go for one of the many gourmet pizza flavors that they have to offer.

Pizza is pizza, right? Well, not exactly. The family run business prides itself in offering interesting twists on traditional styles. For example, The Angler starts out with all the basic elements such as sauce, cheese, and onions. Enter the interesting twist. Sea salmon and capers are not generally accepted as pizza toppings, although you will certainly find them here. What about a spicy cream sauce topped with buffalo seasoned chicken? What about a hawaiian with sweet and sour sauce where the marinara should “nomally” be, known as the Little Waikiki? With dozens of options, these are just “a taste” of the family creations that make Cobblestone so unique.

You can count on the same creativity when it comes to their other menu items. The spinach artichoke dip that everyone seems to be so fond of at sit-down restaurants is mixed with chicken breast and piled high between toasted halves of a hoagie bun, to make a sandwich fit for an artist. Pasta salad with big chunks of tomato and freshly grated parmesan cheese is a wise substitution for the so-so Ceasar salad, while freshly baked home style desserts and cookies are a great way to finish things off.

What it boils down to: One look at the menu will pique your interest enough to want to go back a few times, however, what brings me back every time is the Ranch Pepperoni. Just your normal pepperoni pizza with ranch dressing instead of pizza sauce, but oh so good. For about $6.50 with tax, you can try it in a combo with that pasta salad and a fountain drink. No joke, I once went three days in a row for lunch.
